Natural vanilla

Natural vanilla comes from the vanilla plant (Vanilla planifoilia), a variety of the family of orchids. Vanilla is mainly present in the seeds of the plant. Seeds are fermented (matured) to release the vanillin, the main union of vanilla. During ripening the seeds get the characteristic black color. The aromatic substance derived from the fruit of some of the species, is used both in cooking and in perfumery even like concoction. Very interesting and time consuming is the process by which we get the vanilla, which lasts 4-5 months, sequential exposure of fruit to the sun and the night moisture and then drying in a well ventilated area. The fresh fruit of the vanilla fragrance is not!
